High Tea & Kaya Macarons at Pierre Hermé – Resorts World Sentosa, Singapore

There is something undeniably magical about the combination of luxury and exquisite pastry. So, a trip to Pierre Hermé cafe located in the heart of Resorts World Sentosa (RWS) Singapore is an experience on its own.

Nestled within The Weave, a beautiful indoor-outdoor space designed for connection and relaxation, this outpost of the famed French patisserie offers more than just a caffeine fix. It offers a journey into the artistry of one of the world’s most celebrated pastry chefs.

I recently visited to experience their High Tea set at Table by Pierre Hermé, which is most intriguing, to try their brand-new Singapore-exclusive flavour: Jardin Peranakan, a kaya cream-centred macaron. This is definitely a sweet, luxurious macaron that feels like home.

It is a brilliant, delicious tribute to Singapore, and an absolute must-try. It is, for now, a flavour you can only find right here at the RWS boutique.

Before diving into the treats, it’s worth understanding the legacy behind the name. Pierre Hermé is often dubbed the “Picasso of Pastry.” Born into a family of pastry chefs in Alsace, France, Hermé began his apprenticeship at the age of 14. He honed his craft for over a decade under the legendary Gaston Lenôtre before holding prestigious positions at famous Parisian houses like Fauchon and Ladurée.

In 1998, he co-founded his own brand, Pierre Hermé Paris, with the goal of complete creative freedom. What followed was a revolution in pastry. Hermé is famous for deconstructing flavours and recombining them in unexpected, harmonious ways. His creations—like the iconic “Ispahan” (rose, lychee, and raspberry) are considered modern-day classics, studied and adored worldwide. He doesn’t just make macarons; he creates edible architecture that engages all the senses.

While the macarons are the undisputed stars, the Signature High Tea Set for Two is a magnificent way to sample the breadth of Hermé’s genius. Presented on a sleek, modern stand, it’s a tiered tower of temptation.

The selection is a mix of the savoury and the sweet. You’ll find the chicken club sandwich, smoked salmon choux pastry and poutargue, parmesan shortbread, basil chantilly cream and fresh crunchy peas quiches. But, of course, the sweet layer is where the magic happens. Macarons, madeleines chocolate bon bon and scones.

Paired with a pot of their aromatic tea, a perfectly pulled coffee or not your typical glass of iced bubble tea. This high tea is an exercise in pure indulgence.
